Khi nấu các món như phở, bún, miến hay món canh thì nước dùng là thành phần rất quan trọng. Nhưng để nấu một nồi nước dùng mất nhiều thời gian, trong khi bạn cần chế biến món ăn càng nhanh càng tốt. Vậy sao không làm sẵn nồi nước dùng để dùng dần nhỉ?
Làm sạch xương cá và rửa sạch dưới vòi nước. Để ráo. Hành boa rô, cần tây, cà rốt, hành tây rửa sạch, cắt thành các khối khoảng 1cm. Thì là rửa sạch, để ráo.
Chuẩn bị một nồi to và đổ nước vào. Thêm xương cá, tỏi tây, cần tây, hành tây, hạt tiêu, rau mùi tây, thì là muối và rượu vào. Tất cả các nguyên liệu ngập trong nước. Bật bếp vừa lửa. Đun sôi kỹ trong 45 phút. Lưu ý khi nước bắt đầu sôi thì hạ thấp nhiệt độ cho nước không bị đục.
Khi nước dùng đã được, chắt và lọc qua một màng lọc để lấy nước cốt trong và ngon.
Có thể dùng ngày hoặc để nguội, cho vào hộp và giữ trong tủ lạnh dùng dần trong khoảng 3-5 ngày. Nếu để đông đá thì có thể dùng trong 1 tháng.
